If you are like me you often do not have the time or want the hassle of getting out the sausage maker and putting the ground up venison into those fiddly casings.

Use freshly ground venison to make these easy homemade venison breakfast sausage patties.

Easy Venison Breakfast Sausage Recipes

These easy deer breakfast sausage patties recipes are so simple you can make them before your hunting trip and then cook at camp. Or take the ground venison and pork and make them at camp.

Like the recipes below, I always use some ground pork with the ground venison meat to make my venison breakfast sausage patties for the added fat content pork provides. I suggest you do too.

The best thing is you do not need to be too specific or worry about exact proportions of pork v venison. Whatever you prefer, I typically use 2/3rds venison to ⅓ pork - suits my taste. If you like your deer breakfast sausage to be fattier then use extra pork to venison.

Whoever said cooking as to be that specific.

1. Homemade Easy Venison Breakfast Sausage Recipe

You Will Need:

3 pounds total of ground venison (2lbs) and  ground pork (1lb)

1 onion, minced or diced very finely

1 Tablespoon sea salt

2 teaspoons dry, ground sage

1 teaspoon dry, ground mustard

3/4 t. black pepper

1/4 cup real maple syrup

Mix all of the ingredients together in a large bowl. Get in there and use your hands.

Cut into patties or if you want a more rustic or homemade feel just shape them by hand like I do.

Cook it on the skillet or barbecue until browned on one side 2 to 3 mins, flip and cook for a further 2 -3 minutes on the other side.

You can even freeze them for later.

2. Venison Sausage Patties Recipe

INGREDIENTS:

6 pounds venison, ground

2 pounds pork, ground

1/4 cup Tender Quick*

1/4 cup brown sugar

3 tablespoons sage

1 tablespoon garlic powder

1 tablespoon onion powder

1 teaspoon fennel

1 tablespoon freshly ground black pepper

1 tablespoon crushed red pepper

* I do not use with the tender quick’ when I make my venison breakfast sausage - it is only for curing purposes which are not necessary with this recipe.

Mix all ingredients together in a large bowl.

Similar to the first deer breakfast sausage recipe, shape or cut the mixture into patties to your preferred size.

Cook it on the skillet or barbecue until browned on one side 2 to 3 mins, flip and cook for a further 2 -3 minutes on the other side.

3. Spicy Deer Breakfast Sausage Recipe

INGREDIENTS

Seasoning Mix

4 tablespoons finely chopped fresh sage

4 tablespoons finely chopped fresh thyme

1/8 cup light brown sugar

1/8 cup salt

4 teaspoons crushed fennel seeds

4 teaspoons crushed hot red pepper flakes

2 tablespoons freshly ground black pepper

2 tablespoons garlic powder

3 teaspoons Hot paprika

1 teaspoon Cayenne pepper

Sausage

1 pound of ground pork

3 pounds of ground venison

This is my spicy Deer breakfast sausage recipe because I have increased the amount of hot spices I add to the seasoning. A great early morning eye-opener.

The process for making your homemade venison breakfast sausage is the same.

Mike the seasoning ingredients together in a bowl and then add your ground venison and ground pork to the seasoning. Mix well with your hands.

Shape or cut the mixture into patties to your preferred size.

Cook them on the skillet or barbecue until browned on one side 2 to 3 mins, flip and cook for a further 2 -3 minutes on the other side.
